Leek, Chicken and sausage dutch oven recipe


Head of Broccoli…minced fine
3 leeks..just the solid whites.
1 or so pounds of smoked kielbasa
4 chicken breasts
1 can of mushrooms..
Chicken bullion
1 cup of Riesling
Salt
Olive oil
Ted and barney’s at the start
Red pepper flake

Brown sausage and chicken together..then remove from dutch oven
Then put in veggies and saute…in juices  from meat.  As the veggies reduce then add wine, bullion, and salt..and about 1.5 cups of water.   Bring to  boil and reduce to simmer.  When simmering add meat…then simmer for 10 more minutes.

Elk Meat Loaf Recipe

1 pound ground elk meat
2 eggs

 6 oz. size tomato paste
1 medium onion, finely chopped
1 cup dry bread crumbs
1 1/2 teaspoon salt or preferred Ted and Barney's Seasoning
1/8 teaspoon black pepper
3 tablespoons granulated raw sugar
3 tablespoons Dijon mustard
3 tablespoons apple cider vinegar

2 tablespoon catsup
2 tablespoon steaksauce


PREPARATION:

In a large bowl, lightly beat eggs then add the tomato sauce, onion, crumbs, salt, and pepper. Add ground elk meat and mix well. Press into an ungreased 6" x 6" x 3" loaf pan.

Combine the sugar, mustard, and vinegar then pour over the top of the meatloaf. Bake uncovered at 350 degrees for 70 minutes.

4 pork loin or rib chops, about 1/2 inch thick
3 medium parsnips, cut crosswise into 1/2 inch slices
1 med. onion, sliced
1/2 c. chicken broth
1 tsp. dry mustard
1/4 tsp. salt
1/4 tsp. ground allspice
1/8 tsp. pepper
1 med. apple, cut into 1/4 inch wedges
2 tbsp. snipped parsley
Cook pork in 10-inch skillet over medium heat until brown on both sides. Place parsnips and onion on pork. Mix chicken broth, mustard, salt, allspice and pepper; pour over vegetables. Heat to boiling; reduce heat. Cover and simmer until pork is done, 35 to 40 minutes. Arrange apple on vegetables. Cover and cook just until apple is tender, about 3 minutes. Sprinkle with parsley.
