| PORK CHOPS WITH APPLE AND PARSNIPS | |
4 pork loin or rib chops, about 1/2 inch thick
3 medium parsnips, cut crosswise into 1/2 inch slices 1 med. onion, sliced 1/2 c. chicken broth 1 tsp. dry mustard 1/4 tsp. salt 1/4 tsp. ground allspice 1/8 tsp. pepper 1 med. apple, cut into 1/4 inch wedges 2 tbsp. snipped parsley
Cook pork in 10-inch skillet over medium heat until brown on both sides. Place parsnips and onion on pork. Mix chicken broth, mustard, salt, allspice and pepper; pour over vegetables. Heat to boiling; reduce heat. Cover and simmer until pork is done, 35 to 40 minutes. Arrange apple on vegetables. Cover and cook just until apple is tender, about 3 minutes. Sprinkle with parsley.
